We are approaching my absolute favorite holiday of the year, Thanksgiving, so I thought I should include a dish that will fit in really well into your holiday menu. What we`re making today are Brussel Sprouts with Bacon & Cranberries. Now, to be totally honest I don`t need a special time of year or reason to eat my brussel sprouts. I absolutely love them. The flavors in this preparation just happen to scream Holiday.
Here`s what you need: 2 servings
Brussel Sprouts-2 cups, larger sprouts halved, smaller ones whole, stems trimmed
Bacon-2-3 strips chopped
Chicken Stock, Vegetable Stock or water-1 cup
Dried Cranberries-1/4 cup
Heat a skillet over medium heat and add your bacon. Cook stirring occasionally until crisp.
Go ahead and prep the brussel sprouts.
When browned & crisp remove to a paper towel. Drain excess bacon fat from the skillet leaving about a table spoon.
Add the brussel sprouts to the hot pan and cook for 3-4 minutes. I like to get a little char on these babies for a little smokiness.
Add your stock or water, 1/2 the bacon and dried cranberries to the pan & cook until the liquid is absorbed and evaporated. Remove from heat and plate.
Top with the remaining bacon & cranberries. Enjoy!!
