Broccoli-Parmesan Stuffed Grouper is what`s on this simple man`s plan to healthier eating`s menu today. One of this year`s resolutions for myself was to incorporate more fish & seafood into my diet & so far I`m doing ok. I am fortunate enough to live in an area that abounds with the fresh bounties of the sea so choices aren’t really ever a problem. I just like meat.
That being said, this dish was pretty experimental but was really happy the way it turned out. It came together really quickly & easily with just a few ingredients you probably already have in your fridge. Baked for about 1/2 an hour the end result was perfectly moist flaky fish with a creamy cheesey broccoli filling. Is it just me or are broccoli & cheese just an epic combination? I used Grouper but any white fish will work perfectly. One note, in the future I`d add a little panko bread crumbs to the top for an added texture profile & crunch.
So let`s get started. Here`s what you`ll need for your Broccoli-Parmesan Stuffed Grouper:
Serves 4
Grouper or other white fish filets-4, about 6oz a piece
Broccoli- 1 cup fine chop
Parmesan Cheese- 1/2 cup shredded
Cream Cheese- 4oz
Egg-1
Garlic-2 cloves minced
Lemon Zest- 1 Tablespoon
Parsley-To garnish (optional)

Finely chop your broccoli. Preheat your oven to 350 degrees.Broccoli Parmesan Fish4

Add the broccoli, cream cheese, 1/2 the parmesan, garlic, egg & lemon zest to a bowl with a couple of good turns from the pepper mill. Mix well to thoroughly combine.Broccoli Parmesan Fish6

Lay out your fish filets & add a couple of tablespoons of the broccoli mixture to the wider end. Roll up.Broccoli Parmesan Fish7

Lightly grease a baking dish & add the rolled fish seam side down. Top with the remaining parmesan. Slide in the oven & bake for about 30 minutes. In the mean time go ahead & make your sides.
