Blackened Pork Chops with Fresh Mango Salsa

Pork Chops Mango salsaI should really have called this Grilled Blackened Spice Pork Chops with Fresh Mango Salsa. It ended up being just too hot to fire up the skillet in the kitchen so I decided it best to move outside to the grill. While it`s typically hot, this  summer has already been pretty brutal so far. Just waiting to see what August and September will be like. Sooo glad the ocean is across the street!!

Anyway, this is a favorite. I love the contrasting flavors and textures. You have the blackened spiciness balanced by the sweetness of the mango, the pork meatiness (Is that a word) of the chops and the bright lusciousness of the salsa. By the way, this salsa goes really well with blackened or Cajun spiced fish, chicken etc. You can use a store bought spice mix or make your own like the one I have below.

Bone In Pork Chops

Generously rub both sides of your chops with the seasoning mixture.  Cook to your desired doneness at or until your chops reach an internal temperature of 145 degrees. Cover and let rest at least 5 minutes. Top with Fresh Mango Salsa and enjoy.

Fresh Mango Salsa

2 Large Mangos, ripe but still firm, small dice

1/2 Red Onion, small dice

1/2 Avocado, small dice

1 Plum Tomato, deseeded, small dice

1/2 Bunch Cilantro, chopped

Juice of 1/2 Lime

Mix all ingredients cover and chill for a bit to let the flavors mingle.

Blackened Spice Mix

2 Tble Paprika

2 Tsp Salt

1 Tsp Onion Powder

1 Tsp Garlic Powder

1 Tsp Cayenne

1 Tsp Black Pepper

1/2 Tsp Dried Thyme

1/2 Tsp Dried Oregano

Mix all ingredients and store in an airtight container.
