I should really have called this Grilled Blackened Spice Pork Chops with Fresh Mango Salsa. It ended up being just too hot to fire up the skillet in the kitchen so I decided it best to move outside to the grill. While it`s typically hot, this summer has already been pretty brutal so far. Just waiting to see what August and September will be like. Sooo glad the ocean is across the street!!
Anyway, this is a favorite. I love the contrasting flavors and textures. You have the blackened spiciness balanced by the sweetness of the mango, the pork meatiness (Is that a word) of the chops and the bright lusciousness of the salsa. By the way, this salsa goes really well with blackened or Cajun spiced fish, chicken etc. You can use a store bought spice mix or make your own like the one I have below.
