Oh lasagna, that classic dish from Italy. Meaty, cheesey, tomatoey, warming pure comfort food goodness. One of many things we need to say a big thank you for!
Now I know this is going to be a big statement given that many have a “go to“ recipe for this dish but I`m going there anyway. This simple man`s plan for better eating today is Best Ever Lasagna Bolognese! A rich Bolognese(here) sauce of spicy Italian sausage & beef, 3 cheeses, fresh spinach & of course al dente pasta sheets all come together to form a spectacular marriage for your mouth! This is a great choice for feeding a crowd, can be made ahead of time, is a great freezer meal & most definitely always a pleaser! If it`s not already it should become a staple in your household.

Here`s what you`ll need for your Best Ever Lasagna Bolognese:
Bolognese Sauce– 2 quarts
Ricotta Cheese- 1 quart
Fresh Spinach- 2 cups torn or chopped
Mozzarella Cheese- 1 lb shredded
Parmesan Cheese- 8oz shredded
Grate or shred the mozzarella & parmesan cheeses. I like to use the larger grates for my mozzarella & the smaller for the parmesan but that`s just me. Do whatever makes you happy.
To the ricotta add 2 eggs & mix well to combine.To the bottom of a 9 x 14 inch baking dish add about a cup of the Bolognese sauce. Whenever I make this meat sauce I make a huge batch, some to use & some to freeze. I already had my sauce so just pulled it out, defrosted & warmed in a large soup pot making this come together pretty quickly.Now we start the layering of ingredients. Add 3 sheets of lasagna noodles on top of the sauce. If it looks like the pasta hasn`t been precooked your right. No need, saving more time on the prep. They`ll cook to perfect al dente with the sauce & cheeses.Next goes a layer of creamy ricotta. Some people just add dolops here & there. Again, just me but I want it all in every bite. Spread that stuff across to cover.Now a layer of spinach. Just scatter over the top. I think we can now call this a health food dish.Add half the remaining meaty goodness of the Bolognese.Next goes some of the grated Parmesan.Finally some mozzarella. Be generous. Now we`re going to repeat the whole process one more time.I had to use 4 sheets to cover this time as my baking dish tapers out. In case you forgot what to do here it is in pictures. I wouldn`t want you to go backwards.RicottaSpinachMeatParmMozz, just about there.Another layer of lasagna sheets.Another layer of mozzarella.And now the last of the parmesan.
Generously grease or give a good cover of cooking spray to a piece of aluminum foil & cover tightly. You don`t want the cheese to stick. Bake covered for about 50 minutes. Uncover & bake another 15-20 minutes until the cheese has browned.
Remove & let it sit for 10-15 minutes before serving.
