Well, we`re definitely getting right into the heat of summer here in the Baja! As I`m sitting here it`s 10:00 am & the temperature is 93 degrees & rising. Gonna be another hot one or maybe I should say another 3 months of hot. Welcome back, so nice to see you again but let`s try to stay cool this year, no overheating, no frustrations, we`ll limit the sweaty t-shirts & try to spend as much time as possible in that beautiful big ocean we`re blessed with. And… this year I have a secret weapon, cold soup or more specifically Beat The Heat 5 Minute Chilled Mango Coconut Soup. Yep, 5 minutes active time & an hour or so to chill & you`ll have yourself an incredibly delicious treat. This is the perfect summer starter course for dinner, great to accompany a salad at lunch or basically just fantastic anytime.

I don`t know about you but I`m feeling pretty good about my Beat The Heat 5 Minute Chilled Mango Coconut Soup!Here`s all you need for your Beat The Heat 5 Minute Chilled Mango Coconut Soup:
Mango- 4 cups roughly chopped Fresh is preferred but frozen will work perfectly here!
Coconut Water- 1 1/2 cups
Coconut Milk- 1 15oz can
Lime- 1 large or 2 small juiced
Habanero, Serrano or Jalapeño Pepper- 1, seeds & veins removed
Mint Leaves- a small handful
Salt- 1/2 teaspoonA quick look at the key players. It`s mango season here in Cabo so needless to say a pretty special time but don`t worry, if you can`t get fresh or they`re super expensive frozen mangos will work perfectly in this recipe!You might be jealous but I also have 2 fresh coconut vendors within a minute from my house but no worries. Packaged coconut water & coconut milk are fabulous! Just make sure you get unsweetened coconut milk, not the cream used for Piña Coladas.Remove the meat from the mango & give it a rough chop. Don`t worry, your blender`s going to do all the work.Add to your blender cup.Add in the coconut water, coconut milk, lime juice, mint leaves, chili pepper & salt. Don`t let the chili`s scare you. Most of the heat is in the seeds & veins that you removed. There`s just this ever so slight spice in the background. I used a Habanero pepper because I love their citrusy flavor. Trust me here, the pepper`s are not scary!Give it a whirl & let your blender do it`s thing. Blend until smooth & dreamy! That`s it, the work is done. Nothing to do now but let it chill in the fridge for an hour or so. If you happened to use frozen mangos you can skip this step & serve immediately because it`s already nice & cold.

Ingredients

  • Serves 4
