BBQ Beef Brisket ….Sandwiches or Such

BBQ Beef Brisket Sandwich 2 Summer, winter, spring or fall it really doesn’t matter to me. This is spicy, savory meatiness at it`s best. Beef brisket is slowly braised in a flavorful liquid until fall apart tender, shredded and the finished in a spicy Chipotle BBQ sauce. Here it`s on a toasted buttered bun with a quick tangy slaw, doesn`t  get much better for me.

BBQ Beef  Brisket
3 lbs Beef Brisket
1 Small Onion Sliced
2-3 Cups Beef Stock
3 Dried Chipotle Chile`s
2 Cloves Garlic
Canola Oil
Preheat oven to 325 degrees.
Heat oil in a Dutch oven or heavy bottomed pan over medium high heat. Salt and pepper both sides of your brisket and sear on both sides. About 8 minutes total. Add the remaining ingredients to the pan and cover tightly. Roast for approximately 3 hours or until fall apart tender. Removes brisket from pan and shred with 2 forks reserving 1 1/2 cups of the cooking liquid.

Now you have a choice. You can use your favorite bottled BBQ sauce blended with 2-3 Chipotle Peppers in Adobo or to taste depending on your spice tolerance or you can make your own from scratch. Either way you won`t be disappointed.

Too Finish
16 oz BBQ Sauce
1 Small Onion Diced Fine
2 Cloves Garlic Minced
Reserved Cooking Liquid
1 Tbl Olive Oil
Sautee onion and garlic in olive oil over medium heat until fragrant and onions begin to soften. Add back in shredded brisket, BBQ sauce and reserved cooking liquid. Stir well to mix and bring to a simmer until most of the liquid is gone but still saucy. You`re ready to go. Butter & toast hamburger buns or your favorite sandwich rolls. I like this with a quick slaw but you can add whatever suits your fancy. This also makes great quesadillas, tacos etc or just plain good by itself.
