Look at these beauties !! Was so excited to find these today!! We are just getting into our vegetable season here after the long hot summer so this was a refreshing change and the beginnings of wonderful things to come. I was making Caprese Chicken tonight so thought these would be a fantastic accompaniment. Balsamic Roasted Carrots are what I`m talking about! So super simple but so good!! Here`s what you need:
Carrots- I was lucky enough to find these heirloom`s but any will do.
Balsamic Vinegar- aged preferably
Extra Virgin Olive Oil
Salt & Pepper
Wash your carrots well & it`s not necessary to peel but do if you prefer. If using larger carrots cut halve lengthwise. Toss in a bit of the olive oil & balsamic. Season with salt & pepper.
Preheat your oven to 400 degrees. Line a baking sheet with foil and add the carrots in a single layer. Roast for 35-40 minutes turning half way through. That`s it. Could it be any easier!
