How can I describe these absolutely delicious bundles of pure yum. Well, kind of like that I guess. But really, a little spicy, a little sweet, cool yet hot, crunchy, savory & bursting with flavor in every luscious bite. About ready to have a foodgasm just thinking about`em! What I`m talking about here are Asian Inspired Turkey Lettuce Cups & this simple man`s plan to better eating today.
A great lunch, appetizer or light dinner these are just so good. They`d also be a great option for casual entertaining. Just set plates out with any toppings you decide & let your guests build their own. Oh, & lots of napkins as they can be a bit messy & drippy. Hear me, lots of napkins or maybe bibs but please don`t let that deter you from these finger licking goodies!
Here`s what you`ll need for your Asian Inspired Turkey Lettuce Cups:
Ground Turkey- 1 lb
Ginger- 1 inch piece minced
Garlic- 2-3 cloves minced
Serrano Peppers- 2 stems & seeds removed, minced
Lettuce- whole leaves separated Classically made with Iceberg but I used Butter Lettuce. Really most any type will work.
Lite Soy Sauce-1 Tablespoon
Rice Vinegar- 1 Tablespoon
Oyster Sauce- 1 Tablespoon
Hoisin sauce- 1 Tablespoon
Sambal Oelek or Siracha- 1 Tablespoon, more or less depending on how much heat you want.
Sesame Oil- 1/2 teaspoon
Bean Sprouts- 1 cup
Salted Peanuts- 1/2 cup chopped
Fresh Basil- 1/4 cup fine chop
Fresh Mint- 1/4 cup fine chop
Cilantro- 1/4 cup fine chop
Green Onion or Chives- 1/4 cup thinly slicedMake your sauce. Your gonna use this when you cook the turkey & also to drizzle over the top if desired. Combine the soy sauce, oyster sauce, hoisin sauce, rice vinegar & Sambal Oelek or Siracha in a bowl. Mix well. Control the amount of spice by adding more or less of the chile sauce. Remember you can always add more if wanted but you can`t take it out once it`s in.
Mince your ginger, garlic & chile peppers.
Prep the mint, cilantro, basil, green onions & peanuts.
Separate the lettuce leaves. Do it carefully so they don`t tear.
Heat a tablespoon or so of coconut oil in a skillet over medium high heat & add the ginger, garlic & chiles. Stir & cook for 1 minute.Add the ground turkey to brown breaking it up into small pieces with a wooden spoon or spatula.
To the turkey add about half the sauce. Reserve the other half to drizzle over the top of your lettuce cups.
Give it a good stir & cook 3-4 more minutes. Just about ready to scarf on these babies. Spoon some of the meat mixture into the cups & top with whatever floats your boat or better yet remove to a bowl & let everyone help themselves.
