Asian Inspired Pickled Cucumber Salad

Asian Inspired Pickled Cucumber Salad, a little sweet,  a little spicy, super fresh & light, 5 minutes active time & this simple man`s plan for better eating today. This salad would be a great compliment to any grilled or roasted meat, fish or poultry, burger, or well, just by itself for a quick easy snack.Here`s what you`ll need:
Cucumbers- 2 peeled, sliced in half lengthwise, seeded & sliced, 1/4 inch.
Seasoned Rice Wine Vinegar- 1/4 cup
Soy Sauce- 1-2 Tablespoons
Honey-1-2 teaspoons
Chile Sauce-2 teaspoons (I used Sambal Oelek)
Toasted Sesame Seeds-GarnishThe main players.
Peel, seed & slice the cukes.Mix the rice wine vinegar, chile paste, soy sauce & honey.
Add the cucumber to a bowl, toss with the vinegar mix, refrigerate & allow to marinate 15 minutes to 1 hour. Gently stir occasionally.
Remove to plates or a platter. Garnish with the toasted sesame seeds. Serve & enjoy your Asian Inspired Pickled Cucumber Salad!
