It`s still in the 80`s here so I still want a clean refreshing summer salad these days. Well, this fit`s the bill perfectly!! What we have today is an Arugula Watermelon & Tomato Salad. Accented with fresh mint & basil, crunch added with toasted almonds & all comes together with a balsamic glaze or reduction this is pretty perfect.
Here`s what you`ll need:
Arugula- 1 cup per person, stemmed & rough chop
Watermelon-1/2 cup per person ,1/2 inch dice
Tomato-1/2 cup per person, 1/2 inch dice
Red Onion- Thinly sliced
Mint-Fresh, 1 Tbls per person thinly sliced.
Basil-1 Tbls per person thinly sliced
Feta Cheese- 2 Tbls per person
Almonds- Rough chopped, 2 Tbls per person
Balsamic Glaze or Reduction–2 Tbls per person
These are beautiful, use seedless watermelons if you can (annoying seeds unless you like to spit) but anything will work.

Time to put everything together. Toss the arugula, 2/3`s of the watermelon, tomato, red onion, feta, almonds & a bit of the balsamic glaze together in a bowl. Plate and top with the remaining ingredients.
