Alright, before we get started I`m going to confess my love for pork. Not just in a passing kind of way but in a Boom ShakaLaka Boom, load that pig on my plate & bring extra, eat myself sick kind of way. Grilled, roasted, baked, smoked just give it to me & I`ll be happy. So in case you were wondering this simple man`s plan to better eating today comes in the form of Apple Stuffed Pork Chops with Bleu Cheese & Pecans. Now, not that a basic juicy chop isn’t fantastic on it`s own but we`re going to kick the flavor profile through the roof. Savory pork, sweet apples, salty & pungent bleu cheese, crunchy pecans all come together for an end result which is nothing less than sensational. This dish is completely company worthy but weeknight easy making it a perfect entrée.
Here`s what you`ll need for your Apple Stuffed Pork Chops with Bleu Cheese & Pecans:
Serves 4
Pork Loin Chops- 4, at least an inch thick.
Apple- 1 1/2 cups peeled & diced.
Bleu Cheese 4-5oz crumbled.
Pecans-3/4 cup chopped & toasted.
Onion- 1/2 cup finely chopped.
Thyme- 1/2 teaspoon dried
Garlic-1-2 cloves minced
Cream- 1 cup
Butter 2 Tablespoons
Olive Oil 1 Tablespoon

Make sure they don`t burn or they`ll turn bitter. Remove & set aside.Bleu Cheese apple stuffed pork chop12Peel & dice the apple, chop your onion.Bleu Cheese apple stuffed pork chop13Heat a tablespoon of butter over medium heat & add your apples, onion & thyme. You`ll have some left over which is a good thing. You`re going to add this into a quick pan sauce to finish.Bleu Cheese apple stuffed pork chop3Stuffed & ready to go. Preheat your oven to 375 degrees.Bleu Cheese apple stuffed pork chop4Season well with sea salt & freshly ground pepper.Bleu Cheese apple stuffed pork chop5Heat a tablespoon olive oil & butter in a heavy bottomed skillet over medium high heat. Once good & browned transfer the pan & chops to the oven to finish cooking, 10-15 minutes depending on the thickness.Bleu Cheese apple stuffed pork chop9Once the pork has cooked remove to a plate & tent with foil. Discard all but 1 teaspoon of the grease in your pan. Add the garlic & cook for about a minute. Add in the cream & remaining apple-pecan-bleu cheese mixture, stir & cook for 2-3 minutes. Ready to serve.
