You have to love when friends go fishing and bring you a tasty surprise!! I was fortunate enough to receive some beautiful fresh wahoo soooo, dinner!!! Thanks Ross!! Today what we have is Almond Crusted Wahoo w/Cilantro Basil & Mint Pesto.
Here`s what you`ll need:
Wahoo- Fillets 3-6 oz per person but any white fish will work beautifully
Almonds- 1/4 cup per person if whole, 1/2 of that if already crushed
Bread Crumbs- about an ounce per person
Butter-a tablespoon or so
Cilantro- small bunch chopped
Basil- small bunch chopped
Mint- small bunch chopped
Garlic-1-2 cloves chopped
Lemon- 1/2 juiced
Add the almonds & bread crumbs to a food processor & spin until the nuts are chopped to your desired size.
Chopped & mixed
Add the butter & process again until the mixture come together.
Season your fish with salt & pepper
Spread the almond mixture on the fillets. Place fillets on a foil lined baking sheet and bake in a 400 degree preheated oven for about 20 minutes or until just cooked through.
Add the herbs, garlic & lemon juice to a blender cup and blend. With the blender running slowly add the olive oil to emulsify.
Spoon some of the pesto on a plate and top with the fish. Such fantastic flavors & textures!!
