Albondigas en Salsa Chipotle (Meatballs in Chipotle Sauce) Healthed Up

Albondigas en Salsa Chipotle (Meatballs in Chipotle Sauce) Healthed Up is this simple man`s plan to healthier eating today. Tender juicy meatballs simmered in a spicy tomato sauce. I mean really, does it get much better! This is a pretty classic Mexican inspired dish but today we`re healthing it up a bit. We subbed ground turkey for the traditional beef or pork & added a couple of cups of veggies to the meat mix. Trying to fit a few more in wherever we can right. (And they add moisture & flavor) The end result…Outstanding!!Here`s what you`ll need:
Ground Turkey- 2 lbs
Carrots- 1 cup diced fine
Onion-1 cup diced fine
Celery-3/4 cup diced fine
Cilantro- 1/2 cup chopped +extra to garnish
Eggs-2 beaten
Bread Crumbs-3/4 cup
Chipotle Powder-1 teaspoon
Dried Ground Coriander- 2 teaspoons
Ground Cumin-2 teaspoons divided
Oregano- 1 tablespoon
Salt- 2 teaspoons divided
Tomato Puree- 28 oz
Diced Tomato-1 1/2 cups
Chipotles en Adobo-2-4 depending on your spice preference
Chicken Stock-1 cup

Prep your veggies, small dice.

Try to cut them about the same size.Heat a splash of olive oil over medium high heat. Add the carrots, celery, onion & chipotle powder, stir & cook for 3-4 minutes until the veggies start to soften.

In a large bowl add the turkey.

In goes the sautéed veggies.Add the cilantro, bread crumbs, 1 teaspoon salt, 1 teaspoon cumin & oregano.

Finally the eggs.

With a spoon, spatula, your hands, whatever give a good mix.

In a blender cup add the tomato puree, chipotles in adobo, remaining salt, cumin & chicken stock. Give it a whirl until smooth.DSC_0477

Heat a large skillet or soup pot over medium high heat. Add your tomato puree & the diced tomato, bring to a simmer.Get a bowl of water, wet your hands and make your meatballs. About the size of a golf ball is perfect. Lay the in the simmering chipotle tomato sauce.

Simmer uncovered about 30 minutes gently stirring to turn them over occasionally. Done done & done, your ready to serve.

  3. I made these and they were fantastic! And, I just put the veggie mix into the ground turkey raw…and it was so great, I wouldn’t bother to sautee them…
