Aguachile means chili water so it`s something I`m definitely going to be interested in! Aguachile de Camarones is a Mexican ceviche where fresh raw shrimp are cooked in lime juice with serrano or jalapeño chiles. It`s very spicy with intense but fresh flavors and really so good. In my recipe I have also added habanero chile. They`re very hot but have a great citrusy flavor.
Here`s what you`ll need:
1 lb peeled deveined shrimp.
2-3 Jalapeño Chiles seeded, deveined, rough chop
1 Habanero Chile seeded, deveined, rough chop
3-4 Limes juiced
Cilantro-small bunch chopped
1/2 tsp salt
Cucumber-1/2 cup peeled, seeded & chopped
Red Onion-1/4 cup thinly sliced
Tostadas, tortilla chips or saltine type crackers
Peel & devein your shrimp. If large cut completely in half lengthwise, if smaller cut in half but not all the way through. Open and lie flat in a single layer in a nonreactive dish.
Prep the chiles and cilantro.
Add the chiles, cilantro, lime juice & a 1/2 teaspoon salt to a blender cup.
Blend and let it do it`s thing.
Pour the chile mixture over your shrimp, refrigerate & let marinate 20 minutes.
Prep the cucumber & onion.
Time to put this together. Top the Aguachile de Camarones mixture with the cucumber & red onion. Serve tostadas, tortilla chips or crackers on the side.
