5 Minute Cauliflower Rice or Quinoa

I don’t know if you’re like me but I am trying to eat a little healthier and add a few more veggies to my diet. Ok, not that much but I lie to myself and use these things to justify all the other yummy not so good stuff that I eat.  With that being said,  I have to say this can’t be any easier and is a really good substitute for a bed of rice for a stir fry, curry etc. or quinoa  in a salad.

Here’s what you will need:
5 Minute Cauliflower Rice or Quinoa
1 Head Cauliflower
1 Tbl Butter or EVOO (optional)
S & P to taste

 

 

 

 

Core your cauliflower and roughly chop

 

 

 

 

 

Add to your food processor and spin until you have it broken down into rice size pieces.

 

 

 

Season to taste.

 

 

 

 

 

 

 

At this point it would be a great substitute for quinoa in a salad or if you’re just trying to eat more raw food.

If you are looking more for a rice substitute you have one more step. Heat 1 Tbsp butter or olive oil in a skillet over medium heat. Add cauliflower, stir and cook for a couple of minutes. This will give it a softer texture and of course another element of flavor. Tequila Lime Shrimp would pair wonderfully with this.
