Let`s see, crazy good, start to finish on the table in less than 30 minutes, light but completely satisfying,  low carb, low calorie, low fat, gluten & dairy free & I`ll say again, CRAZY GOOD! What I`m talking about & this simple man`s plan to healthier eating today comes in the form of 20 Minute Baked Tilapia with Watermelon-Habanero Salsa. Mild tender flaky white fish is topped with a super refreshing slightly spicy salsa which really couldn`t be much easier to throw together. This is such a great warm weather, summertime dinner idea I know you`re gonna love.
Another beautiful thing about the premise of this dish is it`s versatility. Any white fish can be subbed for the tilapia or use the salsa as a great topping for grilled chicken or pork. Conversely change out the watermelon for fresh mango, pineapple, strawberries, peaches or papaya. Here`s what you`ll need for your 20 Minute Baked Tilapia with Watermelon-Habanero Salsa:
Serves 4
Tilapia- 4 6oz filets
Seedless Watermelon- 2 cups diced
Red Onion- 1/4 cup finely diced
Habanero Chile- 1-2 deveined, seeded & minced
Cilantro- 1/4 cup finely chopped
Mint- 1/4 cup finely chopped
Lime- 1 juiced

Preheat your oven to 400 degrees. Line a baking sheet with foil (easy peezy clean up) & grease lightly or give a quick hit of cooking spray. Lay your filets out & season with a little salt & fresh pepper. Bake for 10-12 minutes until just cooked through. While the tilapia`s cooking make your salsa.Tilapia with Watermelon Salsa1So basic but pretty right. Don`t let the habanero`s scare you. Sure they`re spicy but not nearly so much with the seeds & veins removed. They have so much citrusy flavor I just love them.   7. Add a pinch of salt & gently mix until well combined.
  8. To Serve
  9. Remove the tilapia filets to plates & top with the salsa.
  10. Enjoy!!

  2. Oh my Tez! That’s one gorgeous plate! I love adding spicy peppers to watermelon. Normally I just do jalapenos but I’m trying your addition of habaneros. The spicier the better, right? Fantastic recipe, my friend, and can’t wait to try it :)
