¨Mexican Style¨ Picadillo

So it`s Taco Tuesday, or Wednesday, or Thursday, or Friday, ok any day I`m all good with tacos!! Really, breakfast lunch or dinner it doesn`t matter, just give me tacos & I`ll be happy!! Today I`m bringing you a classic Mexican dish that`s pretty much a staple in many homes, taquerias or stands throughout Mexico & the southwestern US. This simple man`s plan to better eating comes in the form of ¨Mexican Style¨ Picadillo. Translated, Picadillo means hash & is typically made with ground beef, carrots, onions, tomatoes & spices. Some add a bit of diced potato as well (I do) & a number of other additions are completely acceptable. Think corn, beans, peas etc. In fact there are probably almost as many Picadillo recipes around as there are cooks.
I know you`re thinking, another ground beef or meat recipe. The world is full of them & quite frankly many are kind of boring. This my friends is anything but! The complexities & flavors that develop here are something  dreams are made of but the preparation is super easy, straightforward & comes together in about an hour so do me a favor. Ditch the taco seasoning packet today & make some ¨Mexican Style¨ Picadillo for taco night! (or breakfast or lunch) This also makes a great filling for burritos, quesadillas, chile rellenos, sopes or to top nachos. I like to serve this with my Restaurant Style Mexican Rice & Tomatillo Salsa Verde . Traditionally this recipe is made with beef but I`m using a combination of beef & pork. For a lower fat version ground turkey or chicken would work beautifully.Picadillo14
Here`s what you`ll need for your ¨Mexican Style¨ Picadillo:
Ground Beef- 1 lb
Ground Pork- 1 lb
Salt- 1 1/2 teaspoons
Fresh Pepper- 1 teaspoon
Olive Oil- 2 Tablespoons
Garlic- 4 cloves minced
Serrano or Jalapeño Pepper- 1-3 seeded & minced (Leave the seeds for more heat)
Onion- 1 medium small dice
Tomatoes- 3 cups roughly chopped
Cilantro- small bunch chopped plus more to garnish
Carrots- 2 small dice
Potato- 1 medium diced
Chicken Stock- 2 cups
Chipotle Chili Powder- 1 Tablespoon
Ground Cumin- 1 teaspoon
Dried Oregano- 2 teaspoons (preferably Mexican)
Ground Allspice- 1/2 teaspoon
Ground Cloves- 1/2 teaspoon
Ground Cinnamon- 1/2 teaspoon
Limes- 2 juiced plus more to garnish

Such basic ingredients right. These babies are going to transform into something pretty magical.Picadillo2As usual let`s get the prep work done 1st. Dice your onion & carrots.Picadillo6Dice the potato, chop the cilantro & mince your chile`s & garlic.Picadillo3Give the tomatoes a rough chop.Picadillo4Add the tomatoes to a blender & let it do it`s thing.Picadillo5Blend until relatively smooth. Don`t worry if you have a few chunks. Now let`s get cooking.Picadillo7Heat a splash of olive oil in a large skillet or heavy bottomed pot over medium high heat. Add the ground meat with the onion, salt & pepper. Brown thoroughly breaking up the meat with a wooden spoon or spatula, 5-7 minutes.Picadillo8Here`s where this dish starts to transform into something special! In a matter of minutes your kitchen is going to smell AMAZING! To the ground meat add the carrots, garlic, cilantro, chiles, oreano & ground spices. Give it a good stir & cook 2-3 minutes.Picadillo9Add the chicken stock, tomato puree, diced potatoes, stir & bring to a low simmer.Picadillo10Cook stirring occasionally until most of the liquid has reduced & evaporated, about 30 minutes. Add the juice of 2 limes.Picadillo11Turn off the heat, taste & adjust the seasoning as needed. (Salt & Pepper) You`re ready to serve. Tell me the aromas filling your house aren`t just ridiculous!

Ingredients

  • Ground Beef- 1 lb

Instructions

  2. Add the tomatoes to a blender & let it do it`s thing.
  3. Blend until relatively smooth but don`t worry if you have a few chunks.
  4. Heat a splash of olive oil in a large skillet or heavy bottomed pot over medium high heat. Add the ground meat with the onion, salt & pepper. Brown thoroughly breaking up the meat with a wooden spoon or spatula, 5-7 minutes.
  5. Add the carrots, garlic, cilantro, chiles, oreano & ground spices. Give it a good stir & cook 2-3 minutes.
  6. Add the chicken stock, tomato puree, diced potatoes, stir & bring to a low simmer.
  7. Cook stirring occasionally until most of the liquid has reduced & evaporated, about 30 minutes. Add the juice of 2 limes.
  8. Turn off the heat, taste & adjust the seasoning as needed. (Salt & Pepper) You`re ready to serve.
